Crossbows offer a ranged option for characters uninterested in heavily investing in Dex, as they have no inherent stat scaling, and can be used to quickly fire offhand shots.
This makes them a good choice for using while in-combat to pepper enemies with attacks even when they back off, and for interrupting spellcasting (or item usage, in the case of other players or NPC phantoms trying to drink Estus).
Crossbows only have a basic Tackle skill, lacking the dedicated ranged skills of the other bows.
