You can not sort your inventory in Disney Dreamlight Valley currently. Gameloft is working on implementing it as soon as possible, but at the time of writing this, that feature is not currently in the game.
Your best bet is to put items you aren’t using ins storage to make your inventory a little more manageable. Hopefully, this update comes sooner rather than later because otherwise, it’s going to become pretty hard to find everything you need in your giant bag of tricks.

Luckily it doesn’t seem that anything early on in the game is too complicated, so keeping your inventory sorted shouldn’t be too much of a challenge, just make sure to keep track of everything you pick up in the meantime.
