The Stonesword Key in Elden Ring can be used to unlock specific doors across the game. These doors are always signaled by a small gargoyle statute next to them where you will actually input the key. 

Keys are hard to come by and are found in hidden spots across the map, but you can actually take one as a Keepsake when creating your character. They are one-time use so be careful where you use them. You might be tempted to use it in the Cave of Knowledge when first starting out, but that area is filled with enemies that are very powerful for your current level. 

There are a couple of key doors in the Roundtable hold that have so good loot in them so it’s a good idea to save them for the Roundtable Hold early on.

Eventually, you’ll be able to pick some up for 5000 Runes from a vendor in the Roundtable Hold. You’ll unlock the vendor after acquiring your first Great Rune from a Divine Tower.
